Another day, another bread recipe. I took out the millet and basically replaced it with ground flax seeds. I threw in some spelt for good measure.
I wasn't sure how much ground flax seed to add. It has a pretty distinct flavor that makes this bread taste unlike the others I've made. And the increased sunflower seed presence -- up from 4 tsp. with my last bread -- makes it look pretty cool.
