Directions
1. Cook noodles according to package directions. Drain and rinse under cold water.
2. Combine rice vinegar, dark sesame oil, soy sauce, honey, sambal ulek, and ginger in a large bowl. Stir with a whisk.
3. Add noodles, chicken, and cucumbers to bowl. Toss gently to coat.
4. Top with green onions and peanuts.
