Total cook time: 01 hour
1. Salt and grill eggplant.
2. In separate pan, cook onion in olive oil.
3. Deglaze with red wine.
4. Add ground turkey.
5. Add cans of sauce and simmer.
6. Boil pasta and drain.
7. Spray a Pyrex and dump pasta then meat sauce into it.
8. Cover top with eggplant and top with mozzarella.
9. Cook in oven for about 20 min at 375°F.
