Total cook time: 30 minutes
1. In a large bowl, mix the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg.
2. In a separate bowl, whisk together the pumpkin, buttermilk, eggs, oil, vanilla, and brown sugar.
3. Pour the wet mix into the dry mix and blend together with a wooden spoon until just combined. Add more buttermilk if too thick.
4. Spoon batter onto medium-hot pan and cook like you normally do pancakes.
